Flamingoes, flowers, charcuterie served in gold birdcages: Drinking in the scene at Pinky's and Vanderpump Cocktail Garden.
Imagine looking through the feathers of a showgirl’s headdress and seeing a pink flamingo — maybe one that’s wearing a tiara. That is the profusion of palms, pink roses and art deco accents that greets you at Pinky’s by Vanderpump.
This is, after all, Las Vegas, so more is more. Metallic fronds. Pink etched water glasses. Plush chairs and mirrored ceilings. Charcuterie boards served in golden birdcages.
I texted a photo of my Daddy Issues Champagne cocktail — one of Pinky’s most popular drinks — to my friends. They texted back: “Is that a cotton candy garnish lol?”
It was, lol.
This might be your ordinary profusion of glitz that Vegas does best when it comes to restaurants, but what goes beyond the usual is the scope of this high-profile collab between Caesars Resorts and reality icon Lisa Vanderpump, a “Real Housewives” star who then led the spinoff show “Vanderpump Rules,” which centered around the personalities working at the Los Angeles restaurants of Vanderpump and husband Ken Todd.
The 7,000-square-foot Pinky’s at the Flamingo is Vanderpump’s latest Vegas opening. The partnership goes back to 2019 with the Vanderpump Cocktail Garden at Caesars Palace and now also includes restaurants at Paris Las Vegas and the Caesars Republic in Lake Tahoe, Nev. Soon, an entire casino will bear her name after Caesars rebrands the Cromwell.
Caesars says Vanderpump is “very involved” in all aspects of her restaurants, from design to menu, and she’s in her locations several times a month. Her fans are legion, but I have good news for those who are thinking, “Vander-who??”: You don’t have to be a Bravo TV or reality show devotee to enjoy Pinky’s.
You should, however, to be a fan of a playful menu that offers Deviled Egg Gardens (a serving of five, with toppings like caviar, lobster and smoked salmon); Colossal Coconut Prawn Cigars served in a cigar box; or the Rich Bitch, aka a chocolate truffle martini.
Pinky’s also can appeal to foodies. The food and cocktails were delicious.
I was told that goat cheese balls are a Vanderpump staple, and each restaurant has a different variant. At Pinky’s they’re served with a strawberry sauce and hot honey.
But the real cherry on top was the server team, especially assistant server Miguel, who would drop by persuasively with drink suggestions like the Pinky Colada and the Less Depresso, More Espresso martini.
I then navigated my way across the street to Caesars Palace and, thanks to the expert directions from a staffer at Pinky’s host stand, slipped into a side door just adjacent to the Vanderpump Cocktail Garden.
Forget thinking Pink. Where Pinky’s has ornate windows that look onto the Strip, the Cocktail Garden is in the middle of Caesars’ casino floor, with its towering, frescoed ceiling. Here it’s dusk no matter the hour, and the Cocktail Garden accordingly adopts a sexy, mysterious look. The entrance is bedecked with plants and flowers; wisteria and crystals drip down from ornate chandeliers; the waitresses wear leather bustiers and dramatic makeup. Think Stevie Nicks in her “Rhiannon” era (and yes, they were playing Fleetwood Mac).
I tried the coconut shrimp bao tacos, new to the menu, and was persuaded into the Vanderpump rose cake — divine. I went gaga for a light gin cocktail called the English Garden. Research also demanded I order the Cocktail Garden’s goat cheese balls, which come with Belgian endive and Asian pear salad with poppy seed dressing.
I left the Cocktail Garden twilight and into the bright desert sun, feeling like I had out-Vegased Las Vegas.
